You don’t know what to cook? That’s all right. We’re always thinking of and looking for new recipes to surprise you. We can’t help it. We love cooking. Well, maybe we should say, we love eating well. So, there’s nothing we can do but get to work. Being original and innovative in the kitchen is no easy task. That’s why we’re suggesting a really easy and seasonal idea for supper today. We love courgettes… there’s a lot you can do with them. But we like them best in the form of spirals that lend themselves to many a recipe. Brought to you, as usual, from our dear Beingbiotiful
Ingredients (for four persons)
- 300g spaghetti
- 125 ml oat cream
- 4 to 6 tablespoons grated Parmesan
- 2 egg yolks
- Salt and pepper
- Grated lemon rind
- 1 + 1/2 courgettes cut in spirals
- Water
Method
- Bring water to boil with salt and cook the pasta following the indications on the package. Remember to keep some of the cooking water aside. We’ll use it later on.
- In a bowl, mix the oat cream, grated Parmesan, egg yolks, salt, pepper and grated lemon.
- Wash the courgettes and prepare the spirals with the spiralizer.
- Heat a little oil in a frying pan, add the courgetti and sauté for approximately 3 minutes.
- Strain the pasta, put it back in the pan, add the courgetti, the mix we’ve prepared, and keep stirring while slowly adding enough cooking water until you get a Carbonara effect.
- Serve immediately with more Parmesan and pepper.
