How would you like a hamburger that is not what you expect it to be? Today we propose a different recipe. When you imagine a hamburger, I’m sure you think of meat, chicken or fish. But we’re fond of innovating and relishing healthy and offbeat things. We make them out of rice and lentils with curry! Your curiosity is pricked, isn’t it? We can assure you that however strange they may sound they’re finger licking good. You will make them time and again! Besides, they’re ever so easy and quick to prepare. How about it?

Ingredients (for 7-8 hamburgers)
- 250 g of rice, already cooked
- 250 g of red lentils
- 1 egg
- 1/2 red onion
- A handful of spinach
- 1 teaspoon curry powder
- 1/2 teaspoon cumin powder
- A handful of fresh coriander
- 60 ml oat flakes
- Salt
- Pepper
- A little lemon peel
Sauce
- 1/2 ripe avocado
- 2 tablespoons pesto
- 2 teaspoons ricotta
- Juice of 1/2 lemon
Pesto
- 2 generous handfuls of basil
- 100 g walnuts
- 50 g Parmesan
- 1/2 clove garlic, small
- 60 ml olive oil
- Salt
- Pepper
Follow these steps:
- Blend the rice, lentils, egg, chopped onion, spinach, curry powder, cumin, salt, pepper, coriander, oat flakes and a little lemon peel in your food processor or a bowl until you get a fairly smooth texture. The rice can be a little itsy-bitsy etc.
- Place the mixture in the fridge for approximately 20 minutes. Take it out of the fridge and shape the hamburgers with your hands.
- Put some coconut oil to heat in a frying pan and cook each hamburger for approximately 2-3 minutes on each side or until they are golden brown.
- In a small bowl, use a spoon to mix the ricotta, pesto and avocado until you obtain a smooth mass.
