Brownies of sweet potatoes and dates… a healthy and delicious Christmas recipe!

Christmas is glorious… full of magic, fun and food… lots of food! So, between one dinner and the next we suggest a light and healthy recipe that will be ideal for those days when we have put away no end of prawns. We found it in Directo al Paladar, and liked it very much.

¿Would you like a brownie of sweet potatoes and dates? We know you’re surprised… but don’t stop at the name, because it is much tastier than you think. We made it in the office without mentioning the ingredients… and they loved it! They couldn’t believe what it was made of.

Ingredients (8 persons):

  • 600g sweet potatoes
  • 80g ground almonds
  • 100g Saracen wheat flour
  • 14 Medjool dates
  • 4 tablespoons of pure cocoa powder
  • 45ml Maple syrup
  • A pinch of salt

We start by preheating the oven to 180°C, then we peel the sweet potatoes, cut them in pieces and steam cook them for 15-20 minutes until they are soft.

We mash the cooked sweet potatoes and dates. Place the remainder of the ingredients in a big bowl and mix them. Add the sweet potatoes and dates to this mixture and stir until you have a smooth paste. Line an oven tray with baking paper. Pour the mixture into it and bake for approximately 20 minutes or until the fork comes out clean. Before you cut the brownie into squares, let it cool down completely so it doesn’t break up.
